Tomorrow is a holiday here so work was less intense than usual.
Breakfast: Fried rice, miso soup, and a green smoothie (which came out black thanks to the spinach and mixed berries). Lunch: Experimenting with a new soy meat brand, if you do not boil it with the vegetables but add towards the end it gets a much more interesting consistency. And adding soy sauce definitely raised the taste profile. So lots of veg but also some rice with the fake meat. It did really feel like ground pork in pumpkin puree (in itself, it tastes a bit bittter). Once I figure it out some more, I will publish a recipe on the recipe page. Snack: Some of the kids Halloween-pretzels. Dinner: Pumpkin salad and Costcos vegan pasta. Chock full of soy meat, but my son took an extra helping (and he is normally very picky about vegetables). When we told him there was no meat in it, he had an existential crisis, and came back for a third helping. Todays supplements and dosage: 4 spoonfuls of apple cider vinegar (ACV) in a big glass of water. Todays UA reading: 8.5 mg/dL, still too high. And since it is so tricky to get the right amount of blood in place, I had to repeat the measurement. The first time showed 4.1, which was hardly realistic. Todays step count: 12579 steps.
